The Department of Agriculture and Rural Development (DARD) Veterinary Public Health Unit (VPHU) Manual for Official Controls (MOC) provides details of the tasks, responsibilities and duties VPHU officers undertake in approved establishments supervised by the VPHU. This chapter provides guidance on the import of animals for direct slaughter, import of meat and the export of meat. It documents VPHU roles with regard import and export, including dealing with unsatisfactory consignments and export certification. The application form for meat export is included with this chapter. This form should be used by food business operators wishing to export meat from premises which do not have VPHU staff present on a full time basis.
